Set the capture folder in the [dosbox] section of the configuration file. i.e. SnapDir=c:\users\johndoe\capture
As of v0.73 (possibly prior) it is created automatically on first use, and no longer has to be manually created.
In Mac systems, the default file path is ~/Library/Preferences/capture/
